Dutch oven meals are great for keeping the kitchen warm during the winter months. This is an easy and delicious roast chicken recipe that turned out wonderful!
Preheat oven to 400 degrees F.
Over medium heat on stove top, pour 1 tablespoon of oil into Dutch Oven and saute celery, onion and one chopped garlic glove.
When ingredients have softened, remove from Dutch Oven and set aside. After cleaning chicken, pat dry with paper towel and season one side with preferred spices.
In small bowl, stir butter and other chopped garlic clove. Spread over entire chicken.
Place chicken in Dutch Oven over medium heat on stove, brown the chicken on both sides, about 10 minutes.Now add the celery mixture, along with chopped carrots, potatoes and 3 cups of water. Cover and cook in oven until the chicken reaches 165 degrees F, using a thermometer (about 1 1/2 hours).

I don't have a dutch oven -- what can I use instead?
I think 3 hrs. at 400 degress is too long to cook a 6 lb. chicken. Is the time and temperture correct?
Thank you for pointing this out. 3 hours seems like way too long. Similar recipes at 400 degrees F recommend an hour to an hour and a half, or 15 minutes a pound. Best would be to use a thermometer and cook the chicken until it reaches 165 degrees F.
