Pre Heat oven to 200 degrees C (400 F).
Mix together well oil, sugar, honey, egg, yoghurt, and fruit.
Sift flour and mix in gently, just enough to blend ingredients, be careful not to over mix.
Place spoonfuls of mixture into greased muffin tray (or can line with paper patty pans if prefer).
Cook for approx 15-20 minutes. Check a couple of times to see how going.
Can be served warm or cold, iced or plain, whichever you fancy, delicious either way.

These sound delicious, and nectarines are in our Florida markets right now. They are one of my favorite fruits, so we'll be making Muffins using them.
One market near us is celebrating their 1Year Anniversary, so the most beautiful Nectarines are only 59 cents a pound this week. A day or two on the countertop and they are perfect for eating or cooking.
