When I grill any type of chicken or seafood I've mixed 1/4 cup olive oil with a couple teaspoons each of lemon juice, lime juice, orange juice and a few dashes of salt, pepper, garlic powder and onion powder. I let it marinate for at least 30 minutes. The flavors mix wonderfully.
I USE LEMON PEPPER, TWO CRUSHED CLOVES OF GARLIC, OIL, AND SEAL IN ZIPLOCK BAG FOR A FEW HOURS TURNING TO COAT OCCASIONALLY. THEN GRILL ON SKEWERS
This is one of my favorites:
MARINADE
6 cloves garlic, chopped
1/2 onion, chopped
1/4 cup tarragon vinegar
3 TB. chopped parsley
1/2 tsp. tarragon
2 pounds of shrimp, cleaned.. tails left on.

Recipe
Mix marinade ingredients in blender or food processor. Marinate shrimp 4-7 hours.
Skewer shrimp and grill until done

A red lobster waitress told me they use honey-dash of Tabasco sauce.
