Yummy dish any time. Seems that kids really like this. Most of us are always looking for a way to get vegetables in our kids, and this is a great way to get a couple veggies in them, in my opinion.
Ingredients:
- 2 cups chopped cooked chicken
- 3/4 cup shredded cheddar cheese
- 1/2 cup chopped celery
- 1/2 cup drained crushed pineapple
- 1/3 cup slivered almonds, toasted
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/2 cup mayonnaise
- 1 baked 9 inch pie shell (I use pre-made from the store, baked according to pkg. directions)
- 1/4 cup mayonnaise
- 1/2 cup whipping cream, whipped
- 1/2 cup grated carrot
Directions:
Combine chicken, cheese, celery, pineapple, almonds, paprika, salt, and 1/2 cup mayonnaise in bowl; mix well. Spoon into pie shell. Spread with mixture of 1/4 cup mayonnaise and whipped cream. Sprinkle carrot around edge. Chill until serving time. 8 servings.
