When I was a little girl my mother make a cookie recipe from Jiffy icing mix that had chocolate chips and coconut in it. It was almost like a macaroon. I think the recipe was on the back of the icing box. Does anyone out there know this recipe?

I found a recipe on an archived version of the Jiffy website that contains frosting mix, choc chips and coconut:
*Rich Coconut Delights * (Yield: 35-40 Bite Size Servings)
Crust:
2 pkgs. "Jiffy" White Frosting Mix (divided)
1 1/2 cups flour
1/2 cup graham cracker crumbs
1/3 cup chopped almonds (set aside 2 Tbsp.)
Filling:
1 pkg. (12 oz.) milk chocolate chips
1 (14 oz.) can sweetened condensed milk
1 pkg. (7 oz.) coconut
remaining "JIFFY" White Frosting Mix
# Preheat oven to 350°. Lightly grease a 9"x13" pan.
# Mix together flour, graham cracker crumbs, 1/3 cup of dry White Frosting Mix, nuts and melted butter, until dough is crumbly. Press into prepared pan.
# In mixing bowl mix remaining White Frosting Mix, coconut and milk. Mix well. Spread over crust.
# Sprinkle with chocolate chips and the remaining 2 Tbsp. of almonds.
# Bake for 20-23 minutes or until edges start to get light brown. Cool completely before cutting.

There is also a recipe for Macaroons containing coconut at the link above but they dont contain choc chips. Maybe your mother improvised on that recipe??

There is one for Easy Coconut Cookies but they have no choc chips in them. At the side of the page to the right is a link for a free cookbook you can send for. I dont know if it contains recipes other than what is listed already at the Jiffy site.
