Use your blender to create budget spaghetti sauce and make perfect Italian meatballs with leftovers, with half the usual amount of ground beef.
Start with a can of regular tomato sauce or tomato paste. Place in blender with some leftover frozen veggies, or even extra pasta from your last meal. Blend it all together into a smooth sauce, season as desired. Get creative, I've used canned soup, almost anything and everything. leftover mashed potatoes and even frozen leftover spaghetti from the last time you cooked Italian.
Add leftover veggies, bread crumbs or potato flakes to double the volume of your meatballs. Season the way you like, blend the leftovers in a blender or chop finely. Season the way you like and bake at 350 degrees F for 10 minutes.
Potato flakes work very well as they absorb the moisture of the other ingredients and you end up with a nice textured meatball.
You have a nice healthy meal that tastes great at a fraction of the cost of prepared jar sauce or meatballs.
Don't be afraid to switch from ground beef to breakfast sausage, whatever you have on hand still tastes great, once it is seasoned with oregano and basil.
