Peel or scrub the potatoes (I scrub them so that we can get the extra nutrition from the skins) and cut into chunks. Make sure the chunks are roughly the same shape and size for even cooking. Put potatoes into a microwave safe casserole or bowl. Drizzle with olive oil and stir until potatoes are evenly coated. Season with seasoning salt to taste.
Cover and microwave on high until potatoes are fork tender, about 10-15 minutes, depending on the wattage of your microwave. Add remaining ingredients and mix well. Microwave on high for about 5 more minutes, or until the mixture is heated through and the cheese begins to melt.

Oh, I forgot to tell you all that you should stir the potatoes every couple of minutes to be sure they cook evenly.
I think you could use ham or hamburger in the place of the turkey Pastrami!
