Bring water and vegetables to a boil. Reduce heat and simmer until vegetables are tender. Add remaining ingredients. Cook, stirring occasionally until cheese is melted.

1 can black beans (use the juice too),
1 can Rotel,
16 oz Veggie Broth,
2t chili powder, 1t cumin,
1 onion,
3 cloves garlic.
Sautee onion til translucent and then add minced garlic. After about a minute add all the rest of the ingredients. Cook about 1/2 hr and top with grated cheese, scallions, sour cream etc.
