Which is better, for the doors and windows of a home, paint or varnish?

It depends on what you prefer.
Personally I prefer paint (paint type appropriate depending on whether an inside or outside door) because you can easily change the colors if you want to without having to sand down varish before re-doing. Also, varnish colors are more limited than paint colors.
