Cook the sweet potatoes with the skin on them until tender. Pour into sink immediately to drain and cool. After cooling peel potatoes; just slip the skin off.
Combine sweet potatoes, melted margarine, cinnamon, baking powder in a large bowl. Add buttermilk and vanilla flavoring and mix well Spray baking dish with PAM and pour sweet potato mix into the dish. Place into oven and bake about 35 to 40 minutes. Pudding should be set.
