Are you sure you want mackerel and not salmon? Mackerel is a strong tasting fish that will stink up your whole house. However this recipe will work. I make it with salmon.
One can salmon
One egg
One cup crushed cracker crumbs
One small onion chopped.
Salt and pepper.
Save half the cracker crumbs. Mix engrienients and shape into patties. Cover with crumbs and place in a skillet of hot oil. After a few munites turn and cook another few minutes. They are then ready to eat.
Don't sell mackerel short. It has more omega 3 than salmon and is much cheaper!
There was a time when mackerel tasted better than salmon. We used a lot of it. I found that I could substitute it for salmon in lots of recipes such as salmon loaf and salmon patties.
I found dried parsley added to the mix killed the extra fishy taste. Cheap and on hand.
I have always made tuna fish sandwhiches are with crackers its so good just mix 1 can tuna medium can mackeral the tall can half too whole cup mayo. Same with pickle relish dash salt three dashes of sugar and two to four eggs if this recipe will be doubled this alsoso good with lettuce leaves or salad an great on a hot day served with chips in tortillas the thoughts cause it delish or so outgoing try it let me know good right make sure u have enough mayo.
