Creole Celery and Okra

Ingredients:

  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 2 Tbsp. butter
  • 2-2 1/2 cups tomatoes, cooked
  • 2 cups celery, diced
  • Advertisement

  • 2 cups fresh or frozen okra, cut up
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. basil or oregano

Directions:

In skillet, saute onion and green peppers in butter. Stir in remaining ingredients. Cook only until celery is crisp-tender, 15-20 minutes. Makes 6-8 servings.
