I decided to make some high protein cookies for DH's lunch box. Any suggestions for something that's not loaded with fat and sturdy enough to be in a bag in a lunch box?

Here is a recipe that is made at George Williams College Camp in Wis.
OATMEAL + COOKIES
3 sticks butter or margarine
3/4 cups sugar
2 cups packed brown sugar
3 eggs
2 1/2 cups flour
1 1/4 tsp baking powder
pinch salt
2 tsp cimmamon
4 cups oatrmeal
1 1/2 tsp vanilla
1 cup raisins
1 cup craisens
1 cups chocolate chips
nuts (optional)
Blend buttter and sugars until fluffy. Add eggs and vanilla, mix well. Mix together flour,baking powder, salt and cunnamon. Add to butter mixture, mix well. Add Oatmeal, mix well. Fold in raisins, craisins and chocolate chips.
Here is a recipe that I have developed from an old recipe I had used for about 45 years. I just made a few changes to make it low fat,high fiber, and sugar-free.
Sugar Free Oatmeal Cookies
1/2 cup Unsweetened Applesauce
1/4 cup olive or canola oil
1 whole egg plus 1 egg white
3/4 cup Lowfat Buttermilk
1 cup whole grain flour
1/4 cup self rising flour
1 1/2 cups oatmeal
1 cup Splenda
1/4 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
Combine applesauce, oil, egg and egg white, and buttermilk in a large mixing bowl.
Combine all the dry ingredients as well as the raisins and nuts in a separate bowl and mix well. If raisins are clumped together, rub them into the dry ingredients with your fingers to help separate them. Combine with liquids and mix thoroughly by hand. Drop by tablespoon onto greased cookie sheets. Dip a fork in water and press tops down to flatten cookies. They will rise in baking, but will not spread out. Bake at 400º for 15 minutes. Remove to cooling rack. This recipe will make 36 cookies which is 12 servings.
