Float Off Your Plate Oatmeal Pancakes

Ingredients:

  • 2 cups Oatmeal (Quick or Old Fashioned)
  • 1/2 tsp. baking soda
  • 2 cups all purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 Tbsp. sugar
  • 2 1/2 cups low fat buttermilk
  • 1/3 cup canola oil
  • 2 eggs beaten

Directions:

Mix ingredients in the order they are listed. Bake on hot greased griddle. I use about 1/4 cup of batter for each pancake. When top of pancake is covered with bubbles, turn and brown on the second side. Serve with Hot Blueberry sauce.

To make waffles: Follow the directions above, but separate the eggs, whip the whites until stiff and fold into batter just before baking in the waffle iron.

Blueberry Sauce:

Ingredients:

  • 1 cup whole blueberries
  • 1 cup slightly mashed blueberries
  • 1/4 cup sugar or Splenda
  • 2 Tablespoons corn starch stirred into 2 cups cold water

Directions:

Combine all in a saucepan and bring to a boil, stirring as it heats and thickens
