Have you ever felt disappointed because after you eat that wonderful moist muffin and save the rest for the next day, you find out that they are not wonderful and moist anymore? Well don't be disappointed anymore because after you make the batter you can make a dozen then put the rest in the fridge for up to 30 days! They cook in just 10-15 minutes - that's just amazing! Hope you enjoy them because I did!
Whisk the oil, eggs, sugar, milk, and vanilla together. Add the remaining ingredients and mix well. Bake in a muffin pan at 350 degrees F for 10-15 minutes.
If you want them for another day you can keep the batter in the fridge.

Healthy, tasty and can be kept in the fridge for 30 days.
Whisk eggs,oil and sugar together. Add all the other ingredients and mix. Let the mixture stand in an airtight container overnight.
Next morning preheat oven to 180 degrees C (350 degrees F).Grease a muffin tray and half fill the cups and bake for 15-20 minutes.
If you not baking muffins on that day, you can store it in the fridge.
Serve with butter and tea.
