I opened a box of dry cake mix, put it in a bowl and left it out on the counter for two days. I didn't add any wet ingredients to it. Is it okay to still use it?

I'd check for bugs first. Flies love to lay eggs in stuff like cake mixes, oatmeal, etc. That's why they are sealed so well in the manufacturing plant.
