I'd make a thin white sauce and put some peas in it. Then also have a salad and boiled potatoes. Use the white sauce as a gravy for peas and salmon.

When I make Salmon patties we like maccroni & cheese with them.
I stir fry cabbage with apples, onions, garlic and caraway seeds, salt & pepper to taste and serve with cornbread and the salmon balls or salmon patties. Stewed apples would be a nice side dish also.
I like a side of steamed brown rice or quinoa, and Israeli salad. Israeli salad is cubed cucumbers, cherry tomatoes or grape tomatoes, bell pepper, scallions, and sometimes an avocado or a little feta cheese. I dress it with just olive oil, lemon or lime juice or balsamic vinegar, salt, and pepper.
Wild rice, rocket salad, and coffee flavored cheesecake.
