Confetti Salsa

Easy black eyed pea salsa that everyone loves and it is good for you.

Ingredients:

  • 2 (15 oz.) cans of black eyed peas, drained and rinsed
  • Advertisement

  • 1 small red onion, diced
  • 1 yellow or red pepper, seeded and diced
  • 1 can of Rotel diced tomatoes
  • 10-12 grape tomatoes, seeded and diced
  • 1 bag of frozen shoepeg corn
  • 1 small bottle of Wishbone Italian Dressing
  • Fresh cilantro, optional

Directions:

Mix all ingredients together with a slotted spoon and chill in the serving vessel of choice. Best if refrigerated at least 4-8 hours prior to serving. Serve with tortilla chips.

This recipe was brought to our annual Christmas Eve party 12 years ago and I serve it at New Years, Summer parties and picnics. It is always a hit.

The addition of fresh tomatoes and cilantro brighten the dish. I have used fresh peas but quality can peas tend to hold their shape and texture better.
