Beat condensed milk, lemon juice and lemon peel together. Fold in cool whip and pour into crust. Chill 2 hours or until set.

SHORTBREAD IS SIMILAR TO LIKE A COOKIE DOUGH USED AS A CRUST.BEST I CAN DESCRIBE IT.NESTLE TOLL HOUSE ACTUALLY MAKES ONE. AND IS FOUND IN THE REFRIGERATED SECTION. I'M SURE YOU COULD MAKE ONE FROM SCRATCH BUT I'M NOT SURE HOW
Shortbread is a delicious crumbly pastry, but my guess is that any type of no-bake pie crust would be fine. Or make your own from crushed [Graham] crackers, butter and sugar, if desired.
A question: you recommend getting the shortbread dough from the refrigerated section. Isn't that dough raw? Since this is a no-bake recipe that goes straight into the fridge, you will then end up with raw uncooked dough for a crust, which isn't very crusty. Or am I reading it wrong? Thanks.
