Preheat the grill to medium high or preheat the broiler. Put cheese in small bowl. In a large bowl, mix the ground beef, Worcestershire sauce, paprika and pepper together, preferably with your hands, without overworking. Shape the ground beef mixture into 8 thin, 4 inch wide patties. Put 2 Tbsp. of cheese on top of 4 patties, leaving 1/2 inch border around each patty. Cover each of the patties with on of the remaining patties. Crimp and seal the edges closed. To grill: Lightly oil the rack and grill the stuffed patties, over medium high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook, or they'll split open and cheese will ooze out.) To broil: Cover a broiler pan with foil and cot with cooking spray. Broil the stuffed patties in the upper third of the oven for about 5 minutes per side for medium-well. In either case, let the burgers stand for 5 minutes before serving. You can use any hard or semi-hard cheeses.
