ZUCCHINI CRAB CAKES
2 cups grated squash, squeeze out the juice
2 eggs, well beaten
2 cups bread crumbs
1 tablespoon mayonnaise
1 tablespoon Old Bay seasoning
1 small onion, grated

Mix all ingredients well and make into cakes. Flour on both sides and fry in hot oil until brown.

I've made this for years. I make it without the Old Bay because I don't care if it tastes fishy or not because they are so good.

Zucchini 'Crab' Cakes

2 1/2 cups grated zucchini
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
1/4 cup minced onion
1 teaspoon Old Bay Seasoning
1/4 cup all-purpose flour
1/2 cup vegetable oil for
1. In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well.
2. Shape mixture into patties. Dredge in flour.
