Baked Spinach Dip

Ingredients:

  • 8 oz. cream cheese
  • 8 oz. Monterrey jack cheese
  • 1/3 cup of Parmesan cheese
  • 1 can of Rotel
  • 1/4 cup diced purple onion
  • 1 - 10 oz. package of frozen spinach, chopped and drained

Directions:

Melt cream cheese and Monterrey jack cheese in a large sauce pan over low heat, stirring constantly. Remove from heat when blended (it will look like a clumpy mess for a while). Add the rest of the ingredients and mix until well blended. Pour into a greased casserole dish and bake at 350 degrees F. until hot and bubbly.

Serve warm with crackers or baked pita chips. Refrigerate leftovers, but always serve warm.

Source: This is another recipe from my Aunt who caters weddings. I believe she got the recipe out of the newspaper. Yummy! Enjoy!
