Roll out the pie crust dough on a buttered cookie sheet. Using the butter like a big magic marker, spread a nice coating all over the dough, making sure you cover the whole thing. Liberally sprinkle the Cinnamon Sugar on top of the dough. Use a pizza cutter and score the dough into whatever size you would like (I score mine about 1x 3 inches). Bake according to the dough maker's instructions. When it comes out of the oven you have a sheet of cookies that took longer to bake than prepare.
One last thing .... YUM!
Source: My mother used to do this with the leftover scratch dough she would have left. The whole family loved them and they are especially yummy with Apple or Cherry jelly.
