Homemade Waffles

Ingredients

  • 2 cups flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 3 eggs (separate yolks & whites)
  • 1/2 cup vegetable oil (canola)
  • 1 3/4 cups milk

Directions

In a large bowl, mix the flour, baking powder and salt together. In another bowl, beat the egg yolks with a fork, mixing in the milk and vegetable oil and add to the flour mixture all at once. Stir until blended all together. In another bowl, beat the egg whites till they form a soft peak and gently fold them into the flour mixture. (Don't over-mix - you want to have them fluffy and light, over mixing will make them tough.) If batter looks too thick, you can add a few extra drops of milk. (The batter should look thicker than pancake batter.) Spray the waffle iron well with non-stick cooking spray before pouring batter in iron. Be certain to spray after each waffle, so they do not stick. Serve with syrup or fruit.
