Fried Jam Filled Biscuits

You can eat any leftover refrigerated biscuits cold, if there are any, but they taste better reheated in the microwave for a few seconds.

Ingredients:

  • 4 cups vegetable oil
  • 1 container (7-1/2 oz.) refrigerated buttermilk biscuits, split into 20 biscuits (splitting will be 10 biscuits but just use a dampened sharp knife to turn them in to 20 biscuits
  • 3/4 cup fruit jam, flavor of choice (May I suggest Raspberry ;-)
  • Powdered sugar for dusting

Directions:

Evenly spoon jam on to the center of 10 of the split biscuits. Top with remaining 10 biscuits and firmly but gently press outer edges to thoroughly close.

Heat the oil in an electric skillet or deep fryer to 375 degrees F. Fry biscuits in batches for 1 to 2 minutes on each side or until golden brown.

Place on paper towels, dust with powdered sugar and serve once jam has had time to cool for just a bit.

Izzy, now 4 months, gets more amusing each day.Her new playmate is Tom.
