Soften yeast in warm water. Combine next 4 ingredients; cool. Add 3 cups flour, and mix well. Stir in eggs and softened yeast; beat well. Add enough remaining flour to make a soft dough. Turn onto lightly floured surface. Knead until smooth, 8-10 minutes. Place in lightly-greased bowl. Let rise until doubled; punch down. Divide in half. Let rest 10 minutes.
Roll each half into a 7x15 inch rectangle. Mix 3/4 cup sugar and cinnamon together. Sprinkle on dough, reserving 1-2 teaspoons. Spray 1 teaspoon water on sugar mixture and roll up dough, beginning with narrow side. Place sealed edge down in greased 5x9 inch bread pans. Let rise until doubled.
When ready to bake, brush loaves with softened butter and sprinkle with reserved cinnamon-sugar mixture. Bake at 375 degrees F for 35-40 minutes.
