Stretching Salad

If you have leftover salad, but not enough to go around, look in your pantry. Any of these items can be added to the salad:

  • chickpeas
  • canned beans

  • 3-bean salad
  • green beans
  • beets
  • olives
  • corn relish
  • chopped apple
  • cabbage
  • celery
  • raisins
  • sprouts
  • carrot, finely diced
  • any other canned or leftover vegetable
  • bread cubes

You can make your own lower-calorie croutons by toasting bread in the toaster and cutting it up into cubes. Do not toast it until it's hard and dry, it is really good when still soft in the middle. These are especially good when made with rye or Italian bread. No need to season because your salad dressing has seasoning in it. This is a good way to use up the ends of the bread.
