This is a summer favorite of mine! So nice and cool. Sometimes I want nothing else in the evening for my meal.
Ingredients:
- 2 large or 3 small cucumbers, peeled and sliced
- 1 medium onion, sliced and rings separated
Dressing:
- 1 cup sugar
- 1 cup white vinegar
- 1/4 cup water
- 2 tsp. salt
Directions:
Bring dressing to rolling boil; pour immediately over cucumbers and onions. Let cool at room temperature. May eat within several hours, or refrigerate covered. Will keep for 1 week.
