Lone Ranger Cookies

Just in time for cookie exchange parties.

Cream:

  • 1 1/2 cups shortening
  • 1/2 cup granulated sugar
  • 2 cups light brown sugar
  • 2 tsp. vanilla

  • 2 eggs

Add:

  • 2 cups flour
  • 2 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt

Add:

  • 6 oz. chocolate chips
  • 2 cups cocoa krispies
  • 1 cup oatmeal

Spoon 1 inch apart onto ungreased cookie sheet, lined with parchment paper. Bake at 350 degrees F for 9-10 minutes only. Cool for 1 minute, remove to cooling rack leaving on parchment paper.

Using parchment paper speeds up the cooking process by allowing you to load dough on parchment and having ready to put in oven when you take out a batch that is done. To have even size cookies use a small ice cream scoop.

If you want to make the dough and freeze, make logs and wrap in plastic and freeze. To make cookies from logs, just remove from freezer and cut 1/4-1/2 inch rounds and bake. You may need to add a minute to baking time.
