A tea time loaf good for vegetarians,slice and spread with butter have it with a cup of tea.
In a pot add the sugar, mixed fruit, butter and milk and boil for 5 minutes. Simmer and cool.
In a basin, sift the dry ingredients and spices. Add cream or buttermilk and mix. Combine the fruit mixture and mix well.
Preheat oven to 160 degrees C (appx 320 degrees F) and bake in the centre rack. Grease and line a loaf tin and bake for 90 minutes or until done. Test cake with a wooden skewer to see if it's cooked.
When baking eggless cakes, use a wooden skewer not a metal skewer because the cake sinks to the bottom.
