This is a frugal and super quick and easy recipe for Spanish rice, like restaurants serve alongside Mexican food.
Combine all ingredients except the instant rice in a small saucepan. Bring to a boil until bouillon cube dissolves. Add rice and stir to combine, then remove from heat, cover, and let rest for 5 or 10 minutes. Fluff with fork or spoon and serve.
This recipe makes about 4 small servings as a side dish, simply double it to make more. You can omit the vegetable oil to make low or no-fat, but the oil seems to help the rice not get sticky.
Thrifty tips: Buy instant rice in bulk at Aldi or similar discount stores, buy jar salsa on the dollar aisle of your grocery store or at Aldi or the Mega Mart. This recipe makes restaurant-style Spanish rice for pennies a serving. Way cheaper than the bag of Spanish rice mix.
