Coat rabbit with prepared fish batter. Fry until golden brown. Put into small roaster, or deep baking pan with tin foil as a lid. Mix two cans cream of mushroom soup with one can water; pour over rabbit to cover. Roast on 350 degrees F until tender, approx 1.5 hours. Season to taste.
Serving suggestion: Serve with mashed potatoes and the rabbit gravy.

You can also "Southern Fry" rabbit. Use your favorite recipe for fried chicken coating, then fry as you would chicken. Serve the same "sides" that you do with chicken. Yum!

Shosha, glad to be of help! I haven't had rabbit in years, but this recipe made my mouth water. My son hunts, so he's promised us the rabbit to cook. If he brings enough, we may have enough to Southern-fry it, too. If you don't enjoy rabbit or don't have any on hand, I'm sure just about any other meat could be substituted, including chicken.
