Cherry icebox cake
20 whole graham crackers
2 cups milk
1(6 serving)pack vanilla instant pudding /pie filling
1 3/4 cups frozen whipped topping ( thawed)
2 ( 21oz) can of cherry pie filling
Line a 13x9 baking pan with graham crackers breaking them to fit if needed.
In a bowl, blend cold milk and pudding mix with mixer for 2 minutes at low speed let stand 5 minutes, then gently fold in whipped topping.
Spread 1/2 of pudding mix over graham crackers. Add another layer of grahams.
top with remaining pudding mix and remaining crackers.
Spread pie filling over crackers.
Quick Key Lime Pie: 1 can condensed milk (not evaporated), 1/4 cup lime juice (I use bottled key lime juice), 1 large (or 2 small) tubs Cool Whip (I use the creamy when I can find it). Fold together and put into crust. Either freeze it or let it set for an hour or so in refrigerator. If freezing, let it sit out on counter for about 30 minutes for easier cutting.

I'm going to try this with fat free condensed milk and lite & fit cool whip..I'll let you know how it turns out..
Berry Berry Cool Pie
1 14-ounce can sweetened condensed milk
1/2 cup lemon juice
1 1/2 to 2 cups assorted fresh berries (I've used frozen mixed)
In a large bowl mix together sweetened condensed milk and lemon juice; combine well. Mix in berries. Fold in cool whip. Spoon into crust. Freeze 5 hours or until set. Let stand 30 to 40 min. before serving.
This was a recipe from Eagle Brand/Keebler products. Yummy!

There are a ton of variations on it. Some people use a chocolate cookie crust but I prefer a graham craker crust.
We dont do the topping with the chocolate chips. I dont think it needs it. I tried it with a dollop of whipped cream and didnt think it added much. One time we had crumbled Nutter Butter cookies on top.
I usually add a bit of vanilla (~ 1 tsp) to the pie mixture. First time I made it I whipped the cream as per the recipe. Sometimes I substitute Cool Whip (~2 cups or 8 oz tub) instead and fold in.
I like it when it is half frozen as well.
Thank you for all of your suggestions. I ended up making a peanut butter pie using cream cheese, sugar, pb, and Cool Whip. It also had pieces of miniature Reese's cups in the filling and on top for decoration. It turned out great!
