Blueberry-Lemon Coffee Cake

Ingredients

• 1 egg
• 2-1/4 cups bisquick
• 1/3 cup sugar
• 2/3 cup milk
• Grated peel of 1 medium lemon
• 1 cup frozen Blueberries
• Glaze (below)

Directions

Heat oven to 400 degrees F. Grease round 9"-inch pan. Beat egg in Medium bowl, Stir in Bisquick, sugar, milk, and lemon peel . Gently stir in blueberries. Spread in pan. Bake 20 to 25 minutes. Cool 10 minutes; drizzle with glaze. 8 Servings

Glaze

Stir 2/3 cup powdered sugar and 3 to 4 tsp. lemon juice until smooth.

High Altitude (3500-6500 ft. elevation) Heat oven to 425 degrees F. Stir 2 Tbsps. all-purpose flour into Bisquick. Decrease sugar to 2 Tbsp.
