Granola is a healthy snack and is easy to make. It can be used to top yogurt, ice cream, or can even be enjoyed on it's own.
Combine first seven ingredients and toss to mix well. Combine oil, honey, and vanilla in a saucepan. Heat until warm and drizzle over dry ingredients. Mix well. Spread on greased baking sheet and bake at 375 degrees F for 20 minutes, stirring twice during baking time. Remove from oven, cool, and store in a tightly covered container. Makes about 10 cups.
