Summer Fruit Salad

Ingredients:

  • 1 cup vanilla yogurt
  • 1 Tbsp. mayonnaise or Miracle Whip
  • 1/4 tsp. grated orange peel
  • 2 Tbsp. orange juice
  • 5 cups assorted cut-up fresh fruit

Directions:

Mix yogurt, mayonnaise, orange peel and orange juice in large bowl. Gently stir in fruit. 8 servings.

I used to love fruit salad, but it's kind of soft. My mom used to put a drained can of mixed fruit cocktail and a partially drained can of both mandarin oranges and pineapple chunks in a bowl. Then, came the chunked apples and bananas, and any other fruit you like to add "more of" then what is in the cocktail. She then put in shredded lettuce and enough mayo and whipped cream to make a great crunchy, semi-sweet salad. It's very good on hot days. Give it at least 30 minutes to chill.
