Pour 1 cup milk over 3/4 cup rolled oats, let set 5 minutes. Add 1 tsp. vanilla, 1 Tbsp. sugar, 1/2 tsp. salt, 3 Tbsp. vegetable oil, and 1 beaten egg. Mix well.
Mix together 1/2 cup flour and 1 1/2 tsp. baking powder and add to oatmeal mixture, stir till just combined.
Bake on hot griddle till bubbly on top and golden brown on bottom, then flip over to bake the other side till golden.
Serve with desired toppings. We like to use applesauce on them.

Healthy variation (dairy free):
omit sugar
omit oil
substitute flour with whole wheat flour
substitute vanilla with ground cinnamon
substitute milk with apple juice
add one grated or chopped apple into the apple juice/oat mixture
add 1 tbsp of ground flaxseed, if desired
