Layered Enchilada Pie

Ingredients:

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 minced garlic clove, opt.
  • 2 Tbsp. butter or margarine
  • 1 tsp. salt
  • 1/4 tsp. pepper

  • 1 Tbsp. chili powder
  • 1 can chopped olives
  • 1 can tomato sauce (8oz.)
  • 6 tortillas, lightly buttered
  • 2/3 cup water
  • 2 cups sharp cheddar cheese

Directions:

Brown beef, onion and garlic in butter. Add seasonings, olives and tomato sauce. Simmer for 5-10 minutes. In a 2 quart casserole, alternate layers of tortillas, meat sauce and cheese. Finish by topping it with cheese. Pour water around the edge of the casserole. Cover with foil or a lid.

Bake for 30 minutes at 400 degrees F. Makes 4 servings.

That looks really good Robin. I made one last week, almost the same, except the olives, yum. That sounds really good too. It was made for just the two of us, and so, we had left overs for the next day, and we both noticed that the Enchilada pie tasted even way better the next day.

The same like chili does that the second day.
