Put cinnamon, sugar, and salt into a bag and shake up potatoes in small batches. Place on the screen of your food dryer. Turn it on and dry until crispy, about 12 hours. Store in a glass jar. They will keep for at least a year if you can manage not to eat them.

It's just me and my dog so I slice a sweet potato, brush with olive oil and bake in the oven till crisp. Love them; so does my dog and they are not bad for him.
