Sicilian Chicken

Ingredients:

• 1 chicken, cut into pieces
• 1/2 cup butter or margarine

Coating:

• 3/4 cup flour
• 1 Tbsp. paprika
• 3/4 tsp. pepper

• 2 1/2 tsp. salt

Directions:

One hour prior to serving time, heat oven to 425 degrees F. Combine coating ingredients and use to coat chicken pieces on all sides. Use oven to melt butter in large shallow pan. Place coated chicken, skin side down, in pan. Bake 30 minutes. Turn, bake 15 minutes longer or until golden brown and fork tender.
