Fresh peaches surrounded by caramel and flaky crust, mmm!
Make your favorite pie crust, roll out dough to 1/8 inch thick, cut into 7 inch squares. Place on parchment lined baking sheets. Keep cool while you prepare your peaches.
Place white sugar, packed brown sugar, flour, cinnamon, and nutmeg into food processor. Pulse a couple of times, add butter cut into cubes, and process until it resembles coarse meal. Put into a shallow bowl.
Preheat oven to 375 degrees F.
Put lemon juice in deep bowl. Slip skins from peaches in hot water, slice in half and remove pits then place in the lemon juice. Remove and pat dry, removing the excess juice, then roll in your sugar mixture coating each peach. Pack the center with your sugar mix and press them back together. Place a peach on the center of each of your pastry squares. Dampen the edges with your fingers, bring the edges together, and press the seams to seal. The peach should be entirely enclosed. You can brush the pastry with an egg and water mix if you desire. Sprinkle with sugar. Prick a few holes in the top to let steam escape. Bake in your preheated oven for 40 minutes or peaches are soft. Let cool 20 minutes.
Put a tablespoon of caramel ice cream topping, and ice cream or cream on warm dumplings to bring the smile out on your family and guests.
