Sauteed Veggies

Ingredients

  • 1 bag frozen mixed veggies (carrots, peas, corn, beans)
  • 1/2 stick butter or oleo
  • 1 small onion, chopped fine
  • salt and pepper to taste

Directions

Melt butter in large skillet. Add in the onion and the frozen veggies. Saute until all veggies are a bit caramelized. Salt and pepper to taste. Serve immediately.

My kids absolutely LOVE this and I can guarantee they will eat the whole pan full if I make it. I sometimes add chopped fresh mushrooms, broccoli, or other veggies I have on hand. You can mix this with two cups of cooked rice and two scrambled eggs chopped fine for a complete meal!

Try it with a very small amount of olive oil instead. Also, use brown rice or quinoa (very high in protein and yummy) to make this into a healthy meal that your children will eat.
