Cherry Cola Salad

Family favorite salad.

Ingredients:

  • 8 oz. cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 pkg. cherry gelatin (3oz.)
  • 1 pkg. strawberry gelatin (3oz.)

  • 1 cup boiling water
  • 1 can pitted dark sweet cherries (17oz.)
  • 1 can pineapple tidbits (13oz.)
  • 14 Tbsp. cola
  • 1 cup chopped nuts (opt.)

Directions:

Blend cream cheese and mayonnaise in bowl. Dissolve gelatins in boiling water in large bowl. Stir in cheese mixture. Drain cherries and pineapple, reserving 1 1/2 cups syrup. Stir juices and cola into gelatin. Chill until partially set. Add fruit and nuts. Pour into 9x13 inch dish. Chill until firm.

This looks much like the "Coke Salad" my mother-in-law makes. Her recipe doesn't call for mayo, and the nuts are always skipped (too many people in the family don't like them).

I think I've read in one of my Texas cookbooks that there is a similar recipe using Dr. Pepper.

Coke Salad sounded strange to me at first, but it's pretty good. We don't have it often, but when we do it is enjoyed.
