Low Calorie Molded Fruit Salad

Ingredients

  • 2 pkg. plain gelatin (3 Tbsp.)
  • 1/2 cup cold water
  • 1 cup boiling water
  • 1 cup orange juice
  • 1/4 cup mayonnaise
  • 1/2 tsp. salt
  • Advertisement

  • 1/4 cup granulated white sugar substitute
  • 1 can crushed pineapple in natural juice (15 oz.)
  • 2 cups fresh or frozen blueberries
  • 1 cup lowfat cottage cheese

Directions

Soften gelatin in cold water for 5 minutes. Add boiling water and stir to dissolve. Add orange juice, mayonnaise, salt, and sugar substitute; blend well with beater. Chill until partially set. Add pineapple with juice, blueberries, and cottage cheese. Chill until firm.

Sounds yummy.Will make it this very day. All of Robins` recipes sound really delicious but are certainly not for those of us watching calories, cholesterol etc. This recipe is the exception. Cudos to Robin!
