Cook noodles according to package directions; drain. Brown beef in a large skillet in the oil along with the sliced onion and fresh chopped garlic. Add tomato paste and sauce, basil, parsley, 1/2 tsp. salt, oregano, bay leaf, 1/8 tsp. black pepper and water; simmer for 1 hour. Meanwhile, combine cottage cheese, egg, rest of salt and pepper. Grate Mozzarella cheese if you don't buy the already grated cheese and arrange layers of noodles, cottage cheese, beef mixture and Mozzarella cheese in a 13x9 inch baking dish, ending with cheese on top.

Have been making Lasagna for years and have never, ever cooked the noodles before layering into dish. I simply break them to the size needed, and layer ingredients making sure there's a little extra sauce to spread over the top. It comes out perfectly!
