Yes, you can. More difficult to do latex over oil, but with proper prep, that can be done as well. All surfaces need light to moderate sanding, depending on wood condition. A little more difficult to paint over stained woods. I use oil all over my interior of the house, and to change up, simple prep will allow you to switch to latex. Check with your local hardware store for the experts.
