Combine sugar, honey and water in sauce pan and cook to 242 degrees F on candy thermometer or soft ball stage.
Add walnuts and vanilla; stir until creamy and thick. Turn onto waxed paper to harden, then break into individual pieces.
You can add grated orange peel or cinnamon to the syrup for variety. Makes 1-1/2 lbs. (Makes a nice gift in those 99 cent store "cut glass" dishes.)

Heat English walnuts halves in moderate oven, about 375 degrees F, for 15 minutes, stirring often. Cool. Cook sugar with water, cinnamon and salt to soft-ball stage, which is 235 degrees F on your candy thermometer. Do not stir during the cooking. Remove from heat, add flavoring and the walnuts. Stir gently until mixture becomes creamy. Turn out onto greased surface and separate walnuts as they cool.
