Due to health issues, I cannot eat fried foods. I would love a simple recipe for baked potato chips the thinner, the better. I have attempted this before, but didn't have much luck. I've also tried the microwavable method using a stand where you place a thin slice of potato in each slot, but they didn't turn out well. Thanks in advance for any ideas.

I don't have a recipe for baked potato chips. I do have one for baked French fries. Cut 3 or 4 potatoes into strips. Put them in a bowl and add a tablespoon of oil and toss. Put these onto a cookie sheet or two and bake in a 475 degree oven until done to the crispness you prefer. Then salt.
For a thinner chip I use my potato slicer; the old kind where if your not careful you slice your finger. But as far as baking, I don't know, sorry.
Bed bath and beyond has microwave potato chip "fryer"that is sensational and it is only 6.95. It sounds crazy when you read the directions, but it includes the slicer and the microwave rack. These potato chips are excellent and crispy and no fat!
I don't know how to much make baked chips either. But if you have an Aldi's grocery store in your area, they have baked chips that are tasty and only cost about $1.29 or at any rate, less than $2 a bag.

Ingredients:
1 lb. russet potatoes, cleaned and sliced into 1/8" slices
1 Tbsp olive oil
1/4 tsp salt
Preparation:
1. Preheat the oven to 450°F
2. In a large bowl, toss the potatoes together with the olive oil and salt. Spread the potatoes in a single layer on a large baking pan, coated with cooking spray.
2. Bake for 20-25 minutes, or until the chips are crunchy, but watch to see that the potatoes do not brown. Allow to cool completely.
