Ingredients
- 1 large head cauliflower (cut into bite size florets, about 2 pounds)
- 1/4 cup diced green pepper
- 1-4 ounce can drained sliced mushrooms
- 1/3 cup flour
- 1/4 cup butter
- 3/4 teaspoon salt
- 2 cups milk
- 1 cup shredded cheddar cheese
Directions
Cook cauliflower in boiling water until crisp-tender; drain. Place in greased 13 x 9 inch pan. In a saucepan over medium heat, saute green pepper and mushrooms in butter until tender. Add flour and salt; stir to form a smooth paste. Gradually add milk; bring to a boil, stirring constantly. Cook and stir 2 minutes more or until thickened.
Remove from heat. Stir in 3/4 cup cheese until melted; pour over cauliflower. May refrigerated overnight at this point. Cover and bake at 350 degrees F for 20 minutes. Sprinkle with remaining cheese; return to oven, uncovered for 10-15 minutes or until cheese is melted. Serves-6-8
