This salad is full of fresh vegetables and makes a healthy side dish or light lunch.
Dressing:
Add all veggies to 2 cup hot water and 1 tsp. salt. Bring to a boil and simmer 5 minutes. Drain immediately.
Mix all dressing ingredients together and pour over veggies. Toss once to mix. Refrigerate 3-4 hours and serve.
